Here is a good soup idea.
You will need:
1 chopped clove garlic.
1 chopped brown onion
5 flat desert spoons dairy free margarine.
1 flat desert spoon black mustard seeds.
1 teaspoon soy sauce. (Check ingredients for fish products!)
2 cardomon pods.
20 twists from black pepper grinder.
8 chopped mushrooms.
2 tins chopped tomatos.
2 medium potatoes chopped, cooked and mashed (Leave the skins).
1 cup frozen peas. (Not the mint ones).
Roughly chopped fresh basil leaves.
Method:
In a large saucepan heat up the margarine and add black mustard seeds until they start to pop.
Add onion and garlic and simmer for about 5 minutes.
Crush the cardomon pods with a knife handle, add and simmer for 1 minute.
Add chopped tomato, chopped mushrooms, mashed potato and peas.
Add soy sauce and 20 twists of black pepper.
Bring to fast simmer and add a little hot water if necessary to make a slightly thick consistancy.
Turn down and simmer slowly for 30 minutes.
Add roughly chopped basil leaves and simmer for 2 more minutes.
