Here is a great winter idea.
The following will make 8 pasties, they can be frozen when cooled and microwaved on high for 2 minutes when thawed out.
Wash and cook 1 cup of red lentils (microwave on ½ power with 1½ cups of water for 35 minutes approximately).
Chop 1 cup cabbage, 1 cup carrot and 1 cup potato (microwave with a little water on high for 7 minutes approximately). Strain off water.
Chop 1 onion and fry in 2 tablespoons of canola oil until translucent. Add vegetables, lentils, 1 desert spoon Madras curry powder and 20 twists of black pepper.
Stir up really well adding a little water if necessary until you have a thick consistancy and set aside.
Make the pastry using 4 cups of plain flour, 1 cup of dairy free margarine, water as required and a pinch of salt.
Roll out the pastry and place a small plate upside down on it to cut around and make round shapes.
Brush a little soy milk around the edges of the shapes.
Spoon a little of the mixture (if you use too much you won't be able to close them properly) towards one side of the shapes so you can turn over the edje to join the other side and make the pasties.
Pressing around the edje with a fork will help to seal the pastry.
Brush more soy milk on top of the pasties and prick them several times with a fork.
Place on foil or baking paper on a tray and bake in oven on 180-200 degrees for 45 minutes or until browned. (A slice or spatula will help to lift the pasties on to the baking tray.)
Of course you can buy ready to go pastry in the supermarket if you trust the ingredients, which I don't. _________________ Health and Happiness always. Davey
