Here's an easy meal for a winter day.

Pre-cook and well stir until partially creamy 1 cup yellow split peas.
(Wash well then microwave with 2 cups water at ½ power for 35-40 minutes approx).

Pre-cook 1½ cups white rice. (Wash well then microwave with 2¼ cups water on ½ power for 25 minutes approx).

Other ingredients:

4 medium to large flat mushrooms roughly chopped.
4 medium sized tomatos roughly chopped (blanche and peel them if you want to).
1 cup frozen peas.
Heaped tablespoon dairy free margarine.
Heaped teaspoon curry powder.
20 turns of black pepper.
Chopped fresh corriander (optional).

Method:

Heat dairy free margarine in wok or large saucepan and stir fry chopped mushrooms until they start to shrink.

Add chopped tomatos and frozen peas and stir fry for further 4-5 minutes.

Spoon into large microwave dish and add curry powder, pepper and cooked yellow split peas.

Stir up well adding a very little water if too dry.

Microwave on high until piping hot then add chopped fresh corriander (if desired) and microwave for 1 more minute.

Will serve 3-4 spooned onto heated rice.

Also good as a toast topper.
