If you are a top cook then this is probably not for you!
QUICK MICROWAVE CURRY:
Chop into half inch pieces 2 medium potatos, 2 medium sized carrots and 2 medium sized zucchinis.
Place in round glass casserole dish and add 2 desertspoons oil, then using 2 spoons mix it all up until all is coated in the oil.
Put on lid and microwave on high for 10 minutes.
Add 1 tin of red (kidney) beans, drained and washed.
Place in a cup 2 round teaspoons flour, 1 round teaspoon curry powder, black pepper to taste and 1 teaspoon soy sauce then slowly mix and add water until cup is full and contents blended.
Add to casserole and mix well again using 2 spoons.
With lid on microwave cook on high for 5 minutes, stir again then microwave for another 5 minutes.
Stir it up once more and serve on white rice.
This will provide 2 large or 3 medium serves, the quantity of rice is up to you.
You can substitue other ingrediants, tinned chickpeas or lentils for example, and other vegetables for almost any combination of curry. However I recommend keeping to the potatoes as they contribute to the sauce. If you think your curry is a bit dry you can add (very little) water towards the end of cooking. You can add more curry powder if you like too eat hot! I generally use "Ayam" brand curry powder but different kinds of powders of course bring different flavours. _________________ Health and Happiness always. Davey
