This makes a very quick breakfast and serves two..

Take 175g of firm tofu (½ pack Soyco Tofu from Woolworths), mash well with the potato masher and add 1 flat teaspoon of Madras curry powder, 1 desert spoon naturally brewed soy sauce (e.g. Kikkoman), 1 desert spoon light olive oil (or oil of your choice) and 3 desert spoons of water.

Stir well and microwave for 2 minutes in a covered microwave container.

Stir again and microwave for a further 2 minutes.

Stir and serve on toast spread with non dairy margarine, olive or flaxseed oil.

Options: Chop fresh chives and herbs of your choice and add to the mix.

When cold this also makes an excellent filling in a sandwich or roll with lettuce.

Mmmmmm... I'm a huge fan of food that is quick and easy. Often joke that I will end up 'raw' due to laziness. I will definitely have to give this a go [and stop purchasing so much pre-made tofu! Laughing ]
