Many veg restaurants make their own tofu, if this is what you mean by 'hand made'. Otherwise it has to be sold in packaged from for food safety reasons, but the ingredients are largely the same (except for the coagulant which can be calcium sulphate or magnesium sulphate - "nigari").
Otherwise, I do not know of anyone selling it in any other hand made way.
I can assure you that shops do sell handmade tofu, there was a place in North Sydney who was selling at some stage. It tastes much better than the stuff at Australian shops.
Tofu Shop International in Richmond Victoria sells it for example.
