Spicy Chick Peas with Yoghurt Mayonnaise





Name Spicy Chick Peas with Yoghurt Mayonnaise Recipe No 32

Ingredients 250 gm Chickpeas, soaked overnight
.5 x Chillies, chopped and seeded
3 cm Ginger, chopped
2 x Garlic cloves, chopped
4 x Tomatoes, chopped
1 bunch Coriander, chopped
1 sprig Mint, chopped
.5 tablespoon Cumin powder
1 tablespoon Coriander
1 tablespoon Tomato paste
1 tablespoon Olive oil
1 x Onions, brown, sliced
Garnish Serve with fresh herbs.
Method Drain chick peas and cook covered with water in a large pot. Simmer until tender (about 45 minutes). Drain and keep liquid. Using blender, blend chili, ginger and garlic to make a paste. Add cumin and coriander. Blend. Heat oil and gently fry onions, add chili paste and fry for 1 minute. Add tomato paste, cook until blended with spices, about 5 minutes. Add tomatoes and the chick peas and cook gently for 10 minutes, adding some of the chick pea liquid.
