1 x Capsicums, red 1 x Onions, brown 2 x Potatoes 1 pinch Parmesan cheese 1 x Radishes 2 tablespoons Tahini 3 x Carrots 3 x Zucchini 6 x Mushrooms 3 sticks Celery 1 can Corn 4 x Eggs 2 x Garlic cloves 30 ml Wine, white

| Method |
Chop
and slice vegetables. Oil/butter a baking dish. Place the vegetables in
layers and add the beaten eggs then top with salsa and Parmesan cheese.
Bake in a moderate oven for 45 minutes.
The Frittata can be cooked in a pan or on top of the stove then placed
under the grill to brown slightly. Use eggs for this method.

| Variations |
Option
to cover with a layer of pastry (filo/fine) - brush pastry with a
beaten egg or butter. Substitute egg replacer for eggs. Herbs
(parsnips, peas, beans, rice, almonds, etc.) can be added. |
