| Ingredients |
4 x Capsicums, red 100 gm Lentils, red 50 gm Butter 2 x Garlic cloves, crushed 1 x Apples, diced 50 gm Dates 1 D Coriander, chopped 2 tablespoons Cumin powder 1 tablespoon Olive oil 1 pinch Pepper, ground, to taste

| Method |
Cover lentils with water and bring to boil. Reduce the heat, cover and
cook for 10 minutes until soft but not mushy. Melt the margarine or
butter in a frying pan and add the onion and garlic cooking until soft
the add apple and dates stirring for 3 minutes. Stir in the drained
lentils, coriander, cumin, and pepper then cook for 2 minutes. Put oil
into a baking tin, halve the capsicums and place into the tray. Fill
with the mixture, cover with foil and bake for 30 minutes or until
tender
