| Ingredients |
1 bunch Spinach, silverbeet
500 gm Kumara, par-boiled
250 gm Tofu, hard
1 x Onions, white
1 packet Filo/Fine pastry
.75 cup Pine nuts/Sunflower seeds
1 tablespoon Nutmeg
1 pinch Pepper, black

| Method |
Wash
spinach steam for 8 or 10 minutes or microwave for 3 or 4 minutes. Chop
not too finely. Chop onion and dice tofu. Lightly toast sunflower seeds
or pine-nuts in dry pan. Mix all ingredients in bowl. Add grated nutmeg
and pepper. Add spinach, nutmeg and pine nuts then mix. Place 4 layers
of filo pastry in a baking or Pyrex dish, placing a few knobs of butter
or margarine between each layer. Add half the spinach mixture, then two
more layers of filo pastry. Add remaining mixture. Place 4 more layers
of pastry on top with knobs of butter between the layers and also on
top. Bake in a medium-hot oven for approximately 40 minutes until the
pastry is crisp and brown.
As an alternative the mixture can be made into small parcels.
