6 x Capsicums, red 6 x Tomatoes, large .25 cup Olive oil .25 cup Olives, black 1 bottle Capers, small 1 pinch Pepper, ground, to taste 1 pinch Oregano, chopped 1 sprig Basil, chopped

| Method |
Halve
and seed capsicums and olives. Chop tomatoes. Place capsicums in baking
dish with a little oil. Fill with tomatoes. Scatter olives, capers and
herbs over the capsicums - dredge with oil. Bake in a slow oven for
approximately 45 minutes until capsicums are soft but firm. For quicker
cooking, cover capsicums with foil before baking. |
