Cheesy Vegetable Spread






Name Cheesy Vegetable Spread Recipe No 4

Ingredients 1 cup Cheese - Shredded Farmer Cheese(4 oz)
1 tablespoon Lemon juice
.25 cup Apple - Chopped
2 tablespoons Celery - Finely chopped
2 tablespoons Currants
.5 tablespoon Curry powder
3 tablespoons Yoghurt - Plain
1 tablespoon Soy Sauce
.25 cup Carrot chopped
2 tablespoons Pecans chopped
1 tablespoon Wheatgerm toasted
Garnish
Method In food processor, process cheese, yogurt, lemon juice, and soy sauce until smooth. Stir in remaining ingredients. Use as a spread on crackers, whole wheat bread, or pita crisps, or stuffed into pita pockets. Makes 1 & 1/2 cups
Variations - substitute shredded Cheddar for the farmer cheese - mayonnaise may be substituted for the yogurt - Chop veggies small, spread mixture on split pitas, and place under preheated broiler for about 3 minutes - serve as accompaniment to soups or salads - use as a sandwich spread
Comments Spread may be made in advance, and refrigerated 3-4 days.
