1 cup Mung dhal 1 x Onions, brown, sliced 2 x Garlic cloves 2 cm Ginger, chopped 1 x Chillies, chopped and seeded 1 tablespoon Cumin seeds 1 tablespoon Turmeric 1 tablespoon Curry powder 1 tablespoon Salt

| Method |
Rinse
the dhal several times in a large colander. Bring to boil with 4 cups
of water and then simmer until tender and of a soft porridge
consistency. Add more water if necessary, dhal should be fairly liquid.
It will take up to 1 hour to cook. Meanwhile, saute the onions in some
ghee or oil. When they are soft and browned, remove a few for
decoration. Add the garlic, ginger and chili and fry a few minutes
more. Then add the dry spices and the salt and fry a few minutes more.
Add the cooked dhal and simmer until well blended. Place in a serving
bowl and decorate with the reserved fried onion rings.

Add chopped spinach or chopped tomato towards the end of the dhal's cooking time. |
